docs(segment): fix leftover mmap_* rustdoc after on_disk rename (#10232)

Browse Source 
Point geo OnDiskGeoIndex at on_disk_geo_index and payload storage at
PayloadStorageImpl. The mmap_* modules were renamed and no longer exist.
